After sourcing the potatoes, the artisan distillers mash and ferment them, before distilling the wash through the twin, 650-liter custom-made copper pot stills equipped with 30-foot tall rectification distillation columns. Each batch is distilled three times over, before removing the heads and tails from the distillate and bringing the hearts to proof with water sourced from an aquifer beneath the 100,000-acre Pine Barrens Forest Preserve.
Long Island Spirits is the first distillery on the Island since the 1800’s. Surrounded by over 5,000 acres of potato farms, the distillery is located on the North Fork of Long Island, in the heart of the acclaimed wine region. Guests enjoy a complimentary glass of wine from Martha Clara Vineyards, as well as offered a selection of artisan cheeses from the Village Cheese Shop in Mattituck, while viewing an art exhibition by a notable artist from East Ends Arts. After wine tasting and the gallery viewing, guests find their seats to watch a collection of work presented by Peconic ballet Theatre's professional dance company. The dancers will perform pieces of work that range from Classical Ballet to Jazz, and Modern. A true collaboration of the finest arts that the East End has to offer!
